These sweet and chewy cookies remind me of Christmas. I believe it&#8217;s the combination of ginger and cinnamon flavors that makes this a holiday cookie. This recipe makes about 30 cookies.
1.25 cup all purpose flour
0.5 cup sugar
2 tablespoons molasses
1/2 cup butter (1 stick) at room temperature

0.5 cup sugar<br />

<p>Preheat oven to 375F. Mix ginger, cinnamon, backing soda and flour together well. In a separate bowl, cream butter with sugar. Add egg yolk and beat until smooth. Add flour mixture to the bowl and beat until well mixed. Place small mounds (about 1 tbsp) of batter on your backing dish. Sprinkle sugar over cookies. Bake in the oven for 10-12 minutes or until golden. Cool on racks before serving.</p>

Bake in the oven for 10 minutes until lightly browned. Cool on racks before serving.</p>
